●SIMMERED BEEF WITH MAITAKE MUSHROOMS
             -----Maitake to Gyuuniku no shoyu ni

         

         <Ingredients(for four)>
          300g maitake mushrooms
          150g beef
          5 cups niban dashi
          5 tablespoon 'tamari' soy sauce
          *Tamari is a thick liquid that has a stronger flavor than usual soy sauce even
            though it is made from soybeans. The strong flavor is gained through
            fermenting and culturing the beans.
          2 tablespoons salt pickled prickly ash

          1)Place the maitake mushroom, and beef in a pan and pour the niban dashi.
           Then heat them all together at once.
          2)When it comes to a boil, carefully remove the scum from the surface
           and simmer slowly until the liquid reduced to almost nothing.
